Recipe of the week Lazy daisy cake is easy to make

This is my mother-in-law's recipe from Ohio. She wouldn't give it to me until I moved. It's my favorite cake and the besttasting cake you will ever eat. 4 eggs 2 cups sugar 2 teaspoons vanilla 2 cups flour 2 teaspoons baking powder 1/2 teaspoon salt 1 cup milk 8 tablespoons butter, divided 10 tablespoons brown sugar 4 teaspoons cream or milk 1 cup coconut

Preheat oven to 350 degrees.

Beat eggs until thick. Gradually add sugar, beating constantly. Add vanilla. Mix together flour, baking powder and salt and add to the egg/sugar mixture.

Heat milk and 2 tablespoons butter to boil. Add to the batter, mixing well.

Pour batter in 9-by-15-inch cake dish. Bake at 350 degrees for about 35 minutes. When knife inserted in ce nter of cake comes out clean, cake is done.

Icing: Mix remaining 6 tablespoons of butter with brown sugar, cream or milk, and coconut. Put on top of the baked cake while cake is still hot. Put the cake briefly under oven broiler to get the top slightly browned.
