Recipe of the week English walnut cookies

This is a very good soft cookie and a cookbook favorite, but of course I love nuts in all my cookies. 1/2 cup margarine, softened 1 cup packed brown sugar 1 egg 1/2 teaspoon vanilla 1-3/4 cup flour 1/2 teaspoon baking soda 1/4 teaspoon salt 1 cup walnuts

Cream margarine and sugar together. Add egg and vanilla. Beat until smooth. Mix flour, soda, salt together and add to mixture. Mix well and add walnuts. Form into a roll 2-1/2 inches wide. Wrap in wax paper and freeze until firm.

Cut into thin slices about 1/8inch thick and place on ungreased cookie sheet. Bake in a 400 degree oven for 8 to 10 minutes. Makes two dozen cookies.
